spring time! built a green house. all found material but the plastic. raised beds and filled with black earth from the forest and compost from the neighbors cows. mmm. closed the birch some three weeks after tapping. Stored over 100L. some the classic Latvian way: pour in 3L jar with a black current branch, couple raisin, slice of lemon, and some cloves. of course each family has their own variation. Other 80L were made into four different sparkling beverages (half of which is already gone) there was a mint and wild hops, ginger and wild hops, and then the two fermenting now (with 6% opps!) another ginger and a kvass type beverage. The birch juice doesn’t give much flavor just the base for healthy tonic. And like the other tonic sure might be good with some gin!
